we\u2019d give you a simple, easy to make recipe that allows the Blackberry to shine! \u00a0Blackberries are naturally low in pectin which allows the jelly to set, so there is some lemon juice added class=\"recipe-method__heading\">Method<\/h2>\n<p class=\"recipe-method__heading\">Put the Blackberries in to a stainless steel pan along with the water, on a medium heat.<span class=\"Apple-converted-space\">\u00a0 <\/span>You can mash the berries gently with the back of a fork as they heat to help release the juice.<span class=\"Apple-converted-space\">\u00a0 <\/span>Leave on the heat until very soft and most of the berries have broken down.<\/p>\n<p>Pour the juice and berries in to a muslin lined sieve or jelly bag over a jug and leave to drain for a couple of hours.<\/p>\n<p>Measure the strained juice and put back on a gentle heat.<span class=\"Apple-converted-space\">\u00a0 <\/span>Once warm, add the lemon juice and sugar using the quantities in the ingredients section.<span class=\"Apple-converted-space\">\u00a0 <\/span>Stir over a low heat until all the sugar has dissolved and then turn up the heat and boil rapidly until setting point is reached (104 to 105 degrees centigrade for a jelly).<\/p>\n<p>Pour in to warm, sterilised jars and seal tightly.<\/p>\n<p>Enjoy on warm buttered toast or with cold meats\u2026..or on a spoon from the Our recipe uses blackberries from\u00a0\u00a0Brambly Hedge and cookers freshly picked from Mr Apple's garden. Wring well and leave to cool. Arrange the jelly bag on a stand or up-turned stool with a large bowl beneath, ready for the fruit juice to drip through.<\/p><\/li><li class=\"recipe-method__list-item\"><p class=\"recipe-method__list-item-text\">Place the blackberries, apple, water and lemon juice in a preserving or large, heavy based saucepan.<\/p><\/li><li class=\"recipe-method__list-item\"><p class=\"recipe-method__list-item-text\">Bring to the boil, then simmer over a low heat for 20-25 minutes or until the fruit is completely soft.<\/p><\/li><li class=\"recipe-method__list-item\"><p class=\"recipe-method__list-item-text\">Tip the soft fruit and juice into the jelly bag and leave to drip for 8 hours or until all the juice has been released.<\/p><\/li><li class=\"recipe-method__list-item\"><p class=\"recipe-method__list-item-text\">Prepare the jam jars by washing in hot soapy water and leaving to dry and warm in a cool oven - 130C\/250F\/Gas \u00bd for 10-15 minutes.<\/p><\/li><li class=\"recipe-method__list-item\"><p class=\"recipe-method__list-item-text\">Measure the juice. For every 600ml\/1 pint weigh 450g\/1lb sugar. Put the juice and sugar back into the clean preserving pan, heat over a low heat until all the sugar has dissolved, add the cr\u00e8me de cassis, if using. Bring to the boil and simmer for 10-15 minutes or until setting point is reached.<\/p><\/li><li class=\"recipe-method__list-item\"><p class=\"recipe-method__list-item-text\">Skim away any scum from the top of the jelly and fill the jam jars to the brim. Cover, seal and label.
