Lentils are a fabulous source of protein, and when combined with rich goats cheese and sweet roasted vegetables, provide a hearty yet tasty meal for the hungriest of mice!

INGREDIENTS

  • 75 gms  dry, uncooked puy lentils

  • 100gms soft fresh goats cheese

  • 1 pepper

  • 1 onion

  • Fresh herbs such as basil and parsley

  • Vegetable stock powder

  • Olive oil

  • 1 x 375g sheet of ready rolled puff pastry

  • Egg, for glazing

It’s wild garlic season again, and with it comes a vast array of recipes.  This luscious combination combines the fragrant leaves with cream, yoghurt and crème fraîche, and the result is a vibrant and fragrant starter or accompaniment that will wow your friends and family…

INGREDIENTS

  • 150g fresh wild garlic leaves, preferably the young ones with plenty of flavour.
  • 300mls double cream
  • 12g gelatine (5 small leaves)
  • 150mls crème fraiche or Greek yoghurt
  • 1 – 2 tsp lime or lemon juice

If you’re lucky enough to live in an area where wild garlic grows, you’ll soon be adorned with a green carpet of aromatic leaves.  Make the most of them while they’re young and fresh…

INGREDIENTS

  • 60gms wild garlic leaves, bottoms stems removed
  • 15gm wild garlic flowers, cut flower heads from stem
  • 100gm grated parmesan
  • 70gms toasted whole almonds
  • 100ml olive oil
  • salt

Method

  1. Whizz garlic leaves, flowers, almonds and olive oil in a blender until a paste.
  2. Add parmesan and whizz again. Season.
  3. If not using straight away, store in a sealed container in fridge.Alternatively, to freezer, fill an ice cube tray. When frozen, the cubes can be transferred into a bag or container.

Still deemed by most as a weed, nettles are still not a regular on the foraging menu.  Have a go at making this delicious, nutritious soup and see if you can be converted! Make sure you wear gloves!

INGREDIENTS

  • 180 gms chopped onion
  • 30 gms butter
  • 250 gms nettles, washed and drained.
  • 4 Tsp Swiss vegetable bouillon powder – or vegetable stock cube.
  • 1 Litre water

Very few people think of nettles as an ingredient, but we’re going to convince you otherwise!  We’re not denying that those perilous green pointy leaves will get you, but treat them in the right way and you’ll have a delicious, cheap and easy meal!

  • 4 eggs
  • 400ml cream
  • 2 good pinches ground nutmeg

Wild garlic is growing everywhere at the moment.  On damp mornings it gives a heady aroma which would suggest it has a strong taste, but this is not the case.  It’s similar to eating spinach but with a mild garlic flavour.  It is very versatile because it only needs to be shown the hot water and it’s cooked!

In this recipe we’ve paired it with cheddar in a warm, delicious tart which makes a great light lunch with some crispy lettuce on the side.

INGREDIENTS

  • 175g plain flour
  • 75g butter
  • 1 small egg
  • pinch of sea salt
  • 140g cheddar, grated
  • 125g wild garlic
  • 2 small onions
  • olive oil
  • 3 large eggs
  • 300ml double cream
  • salt and pepper
