It’s really very satisfying making a truly delicious recipe from a very inconspicuous ingredient and in this case, one that many would think was a weed!

  • 120gms fresh sorrel
  • 60gms butter
  • 1 small onion, diced
  • 200gms potatoes, peeled and diced
  • 1 litre vegetable stock
  • 250ml cream

Lentils are a fabulous source of protein, and when combined with rich goats cheese and sweet roasted vegetables, provide a hearty yet tasty meal for the hungriest of mice!

INGREDIENTS

  • 75 gms  dry, uncooked puy lentils

  • 100gms soft fresh goats cheese

  • 1 pepper

  • 1 onion

  • Fresh herbs such as basil and parsley

  • Vegetable stock powder

  • Olive oil

  • 1 x 375g sheet of ready rolled puff pastry

  • Egg, for glazing

  • 150g fresh wild garlic leaves, preferably the young ones with plenty of flavour.
  • 300mls double cream
  • 12g gelatine (5 small leaves)
  • 150mls crème fraiche or Greek yoghurt
  • 1 – 2 tsp lime or lemon juice

The end of winter means that the stores are getting low, but the nuts have kept well, and are perfect in this delicious, chocolatey treat!

INGREDIENTS

  • 200g roasted hazelnuts

  • 200g caster sugar

  • 125g cornflakes

  • 225g dark chocolate, preferably at least 70% cacao

  • 500mls cream

  • 2 egg yolks

  • 25gms caster sugar

  • 70gms finely grated stem ginger

  • 2 Tbsp ginger syrup

If you’re lucky enough to live in an area where wild garlic grows, you’ll soon be adorned with a green carpet of aromatic leaves.  Make the most of them while they’re young and fresh…

INGREDIENTS

  • 60gms wild garlic leaves, bottoms stems removed
  • 15gm wild garlic flowers, cut flower heads from stem
  • 100gm grated parmesan
  • 70gms toasted whole almonds
  • 100ml olive oil
  • salt

Method

  1. Whizz garlic leaves, flowers, almonds and olive oil in a blender until a paste.
  2. Add parmesan and whizz again. Season.
  3. If not using straight away, store in a sealed container in fridge.Alternatively, to freezer, fill an ice cube tray. When frozen, the cubes can be transferred into a bag or container.

  • 175g freshly picked backberries

  • 150gms soft butter

  • 150gms caster sugar

  • 150gms ground almonds

  • 3 medium eggs

  • A handful of flaked almonds.

We are well in to tomato season, and here’s a delicious, summery recipe to use up a glut and tantalise the taste buds! Serves 6

INGREDIENTS

  • 1 kg fresh, really ripe, tomatoes

  • ½  large cucumber

  • 12 capers

  • 1 large garlic clove, crushed

  • 1 red chilli

  • 2 Tbsp sherry vinegar

  • Olive oil

  • 30 gms butter
  • 250 gms nettles, washed and drained.
  • 4 Tsp Swiss vegetable bouillon powder – or vegetable stock cube.
  • 1 Litre water
